The Greenwich Village institution that counts Drake, Rihanna and Barack Obama among its regulars will open its tenth global outpost at Atlantis The Royal on 6 October. Carbone Dubai arrives with the same theatrical flair that has defined the brand since Mario Carbone, Rich Torrisi and Jeff Zalaznick launched their first location in Manhattan over a decade ago.
The Carbone Dubai experience
The Dubai iteration recreates the atmosphere of 1950s New York grand dining rooms, with chandeliers casting light across damask-covered walls and Venetian glass mirrors. Plush leather banquettes in jewel tones frame the dining room, while tuxedo-clad waiters perform tableside preparations. One wall houses what the restaurant describes as one of the largest jellyfish tanks in the world, providing an unexpected aquatic element to the classic Italian American experience.
Beyond the main dining room, guests can choose alfresco seating on the terrace with views of the Skyblaze Fountain Show and Palm Jumeirah. A semi-private dining space accommodates groups of up to 40, while an elongated bar anchors the main room for those preferring cocktails and smaller plates.

The menu features the Italian American classics that built Carbone’s reputation across its locations in cities including London, Miami, Hong Kong and Las Vegas.
