A dedicated fermentation lab produces house-made ferments, preserves, and koji, adding flavour while supporting microbiome health and reducing waste. At the bar, cocktails are built to work with or without alcohol, with signature serves developed in collaboration with the Alchemy Bar, including Clouds Over Islay, which pairs Bruichladdich whisky with amazake and lemon hydrosol. Heritage reimagined

The building itself is worth arriving early to absorb. AvroKO and EPR Architects have preserved the original Grade II listed facade while drawing on the spirit of the Great Exhibition of 1851 throughout the interiors. The restored grand staircase, rebuilt by hand in Devon by Foster + Partners in collaboration with The Hub, rises through three floors to a glass-domed ceiling. Deep greens run through the lobby marble, plant life occupies the original vitrines, and glass shower pods in the rooms allow light to move freely through the building.
