The menu at INA Dubai brilliantly showcases chef Glen Ballis’ philosophy of ingredient-led cooking, with standout dishes that demonstrate real culinary prowess. The tuna tartare with truffle and potato gratin was exceptional – we could have finished five portions.
The fremantle octopus delivered another triumph, with its herb vinaigrette and calamansi creating a bright, refreshing contrast to the expertly charred seafood. The char-grilled asparagus with whipped ricotta and bottarga proved that vegetables can be just as exciting as proteins when treated with this level of creativity.

While the grilled medjool date with wagyu ham and manouri cheese didn’t suit our palate, it showed INA Dubai’s willingness to experiment boldly. The whole seabream fillet demonstrated excellent technique, while the ribeye showcased quality Australian beef cooked medium-rare to perfection over the open flames.
The overall experience confirms that INA Dubai has established itself as a significant addition to Dubai’s competitive dining scene. With its unique atmosphere, skilled execution, and commitment to flame-forward cooking, this concept delivers exactly what J1 Beach needed to complete its culinary offerings.
