Le Graal Cortina is the debut property from a new Italian hospitality collection that launched in early 2026. Le Graal is building a portfolio of properties across Italy, each designed with its own identity while sharing a focus on architecture, design, cuisine and sustainability. Three openings are planned: a five-star hotel in Cortina d’Ampezzo, a private members’ club in Rome, and a Relais & Spa on Lake Garda.
Le Graal Cortina is the first to open, with an August 2026 debut at a 1920s palazzo set steps from the town centre and the ski lifts. The building has been redesigned by architect Achille Salvagni, whose studios operate across London, Rome, New York and Palm Beach. The hotel will offer 30 rooms, 13 of which are suites, all with views of the surrounding Dolomites on all sides.

Le Graal Cortina has been designed as a year-round destination. In winter, direct access to Cortina’s ski lifts is the obvious draw; in summer, the Dolomites offer a very different set of reasons to stay. The ambition is to move away from the seasonal dependency that shapes much of mountain hospitality in the region.
Southern Italian cooking in the Alps

The gastronomic offering at Le Graal Cortina has been developed in consultation with chef Giovanni Guarneri of Ristorante Don Camillo in Ortigia, Sicily. His involvement brings Italian and Sicilian culinary tradition to a Dolomites setting, interpreted with a modern approach. The result is a dining offer with a distinct southern Italian character, an unusual proposition for an alpine hotel and one that sets the property apart from the broader Cortina hospitality scene.
Wellness at Le Graal Cortina is centred on longevity, stress management and energetic balance. The specific treatments and facilities have not yet been detailed in full, but the framework suggests an approach oriented around longer-term wellbeing rather than a standard spa menu.
Rome at the end of 2026
Restoration work is currently underway at Palazzo Medici Clarelli in Rome, where Le Graal Roma is due to open at the end of 2026 as the city’s first Private Members Club with rooms. The property will house eleven rooms and suites, two restaurants, a cloister lounge, an American bar, a speakeasy, a cigar room, a wine cellar, a gym and treatment rooms. The combination of accommodation and club facilities within a historic Roman palazzo is a new format for the city.
